When the barbeque is hot, brush with a bunch of hardy herbs - such as rosemary, oregano, parsley or bayleaves - instead of a pastry brush. This way you won't have a drawer full of brushes with burnt bristles!

COOKERY PROGRAM from July 2011 to February 2012

Dear Cooking Enthusiast,

Welcome to another exciting semester program. This semester offers more classes to tempt the palate and the brain. Those new to The School may wonder at the range of classes and the variety of formats. As always, our starting point is to explore the culture from which cuisine evolves. Some of the classes are tours, a few are dinner/demonstrations where the emphasis is on produce and innovative recipes, but most are practical classes where, under careful tutelage, we aim to hone your culinary skills.



Class Details – this is very important, please read before booking

Classes are small and focussed only on learning, we don’t sell anything else! When attending a practical class we ask that you bring an apron and if you prefer bring your own basic set of knives, including a chef’s knife, a boning knife and a paring knife, but this is optional. If you ever want advice on knives, sharpening and use, don’t hesitate to contact me at the school.

Occupational health and safety regulations emphasize the need to wear closed, flat, non slip shoes, have your hair tied back and wear no jewellery. This is non negotiable.
