A Proper Grilling (practical)

There will be nothing predictable in this new age barbecue class, but I do guarantee to add to your outdoor cookery repertoire not only some great new recipes but also new skills and more confident technique as we cook meat, fish and vegetables using a grill, hotplate and weber.

PRESERVING THE ABUNDANCE

Late summer is the ideal time to pickle vegetables, pot stone fruits and make cumquat jam. In this class we will capture the abundance of summer for the leaner winter months.
Small jars to take home produce will be supplied

South East Asian Tour

After a traditional Vietnamese Pho breakfast we will explore the shelves of a number of Asian Groceries and demystify some of the ingredients and their culinary uses. Then back to the kitchen for a cookery class and splendid shared lunch.

When I travel I try to eat the snacks sold by street vendors - just like the locals. So in this class we will make sushi, spring onion
pancakes, sugar cane prawns, pizza, mussels, empanadas and gelato.
And share some travel tips and stories.

In this course, we explore the history, folklore and mystique of coffee drinking and offer some practice in the art of making the perfect cup of coffee and velvety, textured milk. Private classes are available for 4-6 people. Cost of the class is $70/per person.

MONDO DI CARNE MASTERCLASS Rosa Matto in collaboration with Vincenzo Garreffa.

An interactive class where participants will make fresh sausages and prepare capocollo, pancetta and fantastic, seasoned rolled pork for roasting. Led by Australia’s most famous butcher, Vincenzo Carreffa and the ebullient Rosa Matto, this class will entertain as well as teach you the fundamentals of Italian smallgoods manufacturing.

Please read this information carefully before booking...
Classes, both demonstration and practical are small and focussed only on learning, there is no shopping to distract us from our main purpose!
When practical classes are offered, we ask that participants bring an apron and if possible a chef's knife and a paring knife.
There are important occupational health and safety rules that must be followed when participating in a practical class. These are non-negotiable.
These include:
- Closed, non-slip shoes must be worn
- No jewellry to be worn, this includes wedding bands, watches and earings which do not have clasps.
- Hair must be tied back or under a hat.
- No alcohol can be served while preparations are taking place.
Please ring Rosa on 08 8373 6106 for bookings. Bookings can be accepted only with payment by cheque, money order, credit card or cash.
Refunds are given only with 2 days’ notice. Credits or transfers are accommodated with 24 hours' notice except for special interest courses. Where a class has to be cancelled or postponed as much notice as possible is given. You will then have the option of a credit, transfer or a full refund.
